2 1/4 cups water
1 1/2 cups sugar
1/2 teaspoon finely grated
orange peel

fresh orange juice
2 tablespoons fresh lemon juice
1/8 teaspoon cream of tartar

egg white -- stiffly beaten

cup Cointreau
In a saucepan, combine 2 cups of water and 1 cup of sugar. Boil for 5 min. Add
orange peel, orange juice and lemon juice to sugar syrup. Mix well. Cool and
then strain. Still-freeze to mush. Prepare a second sugar syrup by combining
remaining sugar and water and cream of tartar in a saucepan. Boil for 5 min.
Beat sugar syrup into stiffly beaten egg white. Beat mixture until cool. Beat
mush with a rotary beater, gradually adding stiffly beaten egg white mixture and
Cointreau while beating. Still-freeze until firm.
