BEEF MADRAS
BEEF MADRAS (serves 6)
1 Tbsp of oil
3 lb of beef cut into cubes
10 fl oz of coconut milk (If you can't get the real thing, try
dessicated coconut and boiling water. Leave to cool before using)
16 fl oz of beef stock. (Or use a stock cube)
PASTE
1 Tbsp Coriander seeds
1 Tbsp cumin seeds
2 red chillies, seeded and chopped
12 fresh curry leaves (or 6 if you can only get dried)
2 cloves of garlic
1 Tbsp lime juice
1 Tbsp brown sugar
About 3 Tbsp water
Make the Paste. Put everything in a processor and zuzz
until you get a paste.
Heat the oil in a pan. Add the paste and cook for 1
min. Add the beef cubes, stir to make sure they are all covered
in paste and cook until browned.
Add Coconut milk and beef stock. Simmer for about 1
hour. (You might need more stock if it reduces too much.)
