Irish Soda Bread
Irish Soda Bread
4 cups all-purpose flour
1/2 cup (1 stick) butter, melted
1 Tbsp butter, melted (for brushing top)
2/3 cup sugar
1 cup raisins
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 eggs, beaten
2 cups milk
Preheat oven to 350 degrees. In a large bowl, combine all the ingredients
EXCEPT the 1 Tbsp butter; mix just until moistened. Place in a greased
9-inch round baking pan and bake for one hour or until a knife inserted in
the center comes out clean. After removing from oven, brush the top with
the 1 Tbsp melted butter. Makes 6-8 servings.
Now mind ye, this bread is best served piping hot. But if ye find it a wee
long-time until ye'll be eatin' it, then ye can just re-warm the bread in a
200-degree oven fer just ten minutes.
Now ye may notice there's not much Irish to our surnames below, but our
family tree is brimmin' with Irish - clans such as Murray and Devlin,
Canavan and McGoldrick, Smith and Young - just to name a few. Anyway, enjoy
