Instant Potato Knishes

8 cups Flour -- sifted
2 cups Shortening
1 tablespoon Sugar
1 tablespoon Salt
2 cups -Cold Water
6 cups -boiling water
4 packages French's Instant Mashed -- Potato Granules
1 teaspoon Salt

My mother used to make knishes like this starting with real mashed 
potatoes. I would use schmaltz for the shortening in the filling not the 
pastry. ...

Combine four, shortening, sugar, salt and cold water and mix thoroughly 
until firm. Refrigerate until chilled.

Meanwhile, add instant mashed potatoes to boiling water with salt and 
pepper, mixing well. Allow to cool. Saute onions in shortening and add 
to potatoes with 1 beaten egg, mixing well.

Remove dough from the fridge and roll out very thin into strips about 
10x3". Place potato filling on dough and moisten edges with beaten egg.
Roll by pulling up 10" sides and overlapping them. Place strips on lightly 
greased baking pan' cut strips into 1" pieces and brush tops with beaten 
egg. Bake in a 350 degree oven for 25 minutes.
