Betsey's Lasagna 

1 lb. ricotta cheese
8 oz. mozzarella cheese, grated
5 oz. Parmesan cheese, finely grated
2 packages frozen spinach (10 oz each?), thawed and drained
1 lb. mushrooms, sliced and sauteed.
2 jars (not sure of the size, probably 20 oz each) sauce (we used Classico Tomato & Basil, Prego is too sweet).
cooked lasagne Noodles (just over one box worth, probably)

Preheat oven to 350 F.

Mix together the ricotta, the Parmesan, and half of the mozzarella in
a large bowl. Add in the spinach.

In a 9x13 pan, spread some sauce, a layer of noodles, a layer of
cheese, a layer of noodles, a layer of sauce, the mushrooms, a layer
of noodles, a layer of cheese, and so on. On the last layer of
noodles, spread sauce and sprinkle with the rest of the mozzarella.

Cover with aluminum foil. Bake for 45-60 minutes. When it's hot,
remove the foil and return to the oven for ~10-15 minutes to brown.

Let sit for 5-10 minutes, and enjoy!
