Italian-Style Pepper Steak  -  Low Carb Desserts Recipes

Italian-Style Pepper Steak ( my cook book & my variation )
2 med.sweet peppers cut into strips
1/2 cup onions
2 cloves garlic
oil
3/4 pound beef top sirloin steak
salt
3/4 cup beef broth canned
1/2 tsp. oregano or basil
2 medium tomatoes seeded & chopped ( 1 cup )

Cook peppers, onion, & garlic in oil till crisp tender. Remove from pan.
keep warm. Cook meat in same pan. Add more oil if necessary. Cook till
slightly pink in center. Transfer meat to serving platter. For gravy, add
beef broth and oregano or basil to reserved drippings. Bring to boil. Boil
uncovered till reduced to 1/3 cup, scraping brown bits from pan. Stir in the
cooked vegetables & tomatoes. Heat through. spoon over meat. makes 4
servings.

fiber, 18 g pro.,

***I usually double the meat, only use one pepper, only one garlic clove
minced and for the tomatoes I use one 15 oz. can of hunts chopped tomatoes
( but I have heard of people using just a tad of tomato paste instead of
tomatoes in recipes like this. My version is 31.4 carbs - 8.38 fiber = 23.02
carbs for the whole recipe.
