Low Carb Scone - Low Carb Desserts Recipes
Here is a recipe for a Low Carb Scone. I modified a regular scone recipe, it
tastes a little like cornbread.
Ingredients needed:
2 cups Plain Isolated Soy Protein
1/3 cup splenda or other non sugar sweetner
2 teaspoons Baking Powder (I used featherweight sodium free brand)
1/3 cup chilled unsalted butter
1 egg beaten
1 teaspoon vanilla
1/2 cup heavy whipping cream
In a large bowl combine soy protein, sweetner and baking powder. Cut the
butter into small pieces and add to bowl. Mix all of it together. In another
bowl add whipping cream, one beaten egg and the vanilla. Add this mixture to
the "flour" mixture. Stir all the ingredients together.
Knead the dough mixture, because of the soy protein it gets a little sticky.
Then scoop or spoon the mixture on a cookie sheet (use bakers paper or
grease the sheet). I made them a little smaller than you would usually find
scones.
Beat one egg and a tablespoon of whipping cream. Glaze the scones with the
eggwash before baking. Bake at 375 for 10-12 minutes or until the scones are
golden brown.
I ended up with 8 scones from the above recipe.
