Pecan Dipped Salmon
My fav salmon recipe of all time....
Put some pecan pieces of halves in the blender until you have a course ground.
Crush some porkrinds to a course powder. Mix equal parts porkrind crumbs and
ground pecans, dash salt and pepper, and a bit of cayenne if you like it spicy.
Dip salmon fillets in a cream and egg mixture (I use one egg, and about 1/2 cup
heavy cream) then into the porkie/pecan crumbs to coat evenly. Fry in coconut
oil and butter til golden brown....serve with hollandaise sauce. Everyone in my
house loves this recipe.
