Bloody Mary Chicken - Low Carb Recipes
Ingredients:
1 diced chicken breast (cooked)
1/8 cup chopped onions
1/8 cup or less of chopped red or green pepper
1 oz Bloody mary mix (or V8/tomato juice, i suppose)
Optional: A medium pinch (1/16 or 1/8 cup?) of shredded cheese (your
favorite type of cheese)
Spay a pan w/ non-stick spray and cook the onions and peppers. Add a
little water to keep the stuff bubbly and moist. Throw in a cooked
diced up chicken breast. (I always have a stash of cooked chicken
breast in the fridge) Pour in the bloody mary mix. This mix adds a
lot of flavor and spice. Cook until everythings nice and hot. If
it's too liquidy, just simmer it down. Before serving sprinkle the
cheese on top (optional)
If you like it real spicy, you can add some tobasco sauce. Today i
tried a few drops of lemon juice, and it worked well. I don't think
you can mess this up.
The result (i think) is really tasty. It's kind of like the filler of
a fajita. This actually could be a good low carb alternative for a
fajita (fajita seasoning is quite carby).
I don't know the carb count, but i can't imagine it would be very
high.

It looks delicious to me! For someone who needs fewer carbs, they could make it
even lower in carb by using scallions in place of the onions and a fresh tomato
in place of the juice.
