Ricotta with Cocoa and Brandy- Low Carb Dessert Recipes
Ricotta with Cocoa and Brandy
1 lb whole milk ricotta cheese (use skim milk ricotta if you're watching
your fat intake)
sugar substitute to equal 1/4 cup of sugar
3 tablespoons dark cocoa powder
3 tablespoons brandy (optional. I've never used it.)
1/4 c unpeeled almonds, toasted and coarsely chopped (to toast nuts,
spread on a baking sheet and toast in a 350° oven for about 10 minutes)
To remove the lumps in the ricotta, use a spatula to push it through a
fine-mesh sieve, repeating the process a second time if desired.
Alternatively, whirl the ricotta in a blender or food processor until
smooth. (I never bothered to do this!)
In a bowl, combine the ricotta with the sugar substitute, cocoa, and
brandy, and stir well to combine. Refrigerate until needed.
To serve, spoon the mixture into small bowls or cups. Sprinkle the top
with toasted almonds.
