Meatball Soup


This is a recipe from a new cookbook MEASURE FOR MEASURE that I bought.
I am going totry the recipe tonight.

Meatball Soup

Ingredients:
1 qt. 1 liter water
2 cubes 2 cubes beef bouillon
2 stalks 2 stalks celery(chopped)
1/2 cup 125 ml cooked rice(optional)
1/2 lb 250 gm lean ground beef
dash dash ground nutmeg

Method:
Boil the water with bouillon cubes (add more water if desired).
Mix in chopped celeryand cooked rice(optional). Form the ground meat
into mini-meatballs, and add it and the nutmeg to the soup. Let simmer 8
minutes. Serves 3 to 4.



TIPS:
1) I prefer to eat ground chicken or ground turkey (they sell in my local
store for $1.39/lb. Ground lamb is also cheaper in my area. Use whatever is
cheapest and/or available.

2) Personally, I would add more vegetables, especially if you want to make
a full meal of it. If you don't like rice, use macaroni or other pasta.
