What do three Australian teenagers know about Mexican food? Apparently, quite a bit!

Raylee, Nikki and Teresa cooked up "Today's Special" as an entry in the Tafe Workskills Competition.

The girls start their journey with a description of how different people in Mexico prepare and eat meals. They bring up one point that many of us overlook - meal timing. In Mexico the typical large meal is lunch - not dinner. Out side of Mexico light lunches are more popular with a large dinner in the evening.

They follow with examples of typical Mexican recipes. These simplified recipes are detailed and complete. They have altered some ingredients to be more suitable to the Australian food market. however, they have also provided details missing in other recipes such as how to use a tortilla press and the art of finding the right texture for guacamole. The details are the beauty of this site. You may have read the recipe for a frijoles so many times you skim past it in new cookbooks. How many of those recipes told you that you should keep adding water to heating beans until you have a thick soup? Does your recipe book suggest sandwich bags to line your tortilla press? Or mixing guacamole by hand?

There are a couple places in this site where I feel like I am being fed regurgitated facts from students who have not tried these recipes. However, the site is educational and well put together overall.
