What was that amazing cake you had at the wedding? Looking for the shower cake recipe?
Did you taste a unique birthday cake and just have to have the recipe? Was there an
ugly cake at the party you're dying to figure out?
Chances are you have encountered the "Tres
Leche." Tres Leche is a three milk cake traditionally baked with goat's milk.
Times have changed (and so have family milk sources), leading to many variations on
this recipe. In fact, I recently took page one from one recipe - page two from
another - and ended up with a wonderful new version!
Variations on a Theme
- Mix a little maraschino cherry juice in with your three milk mixture and top cake with
maraschino cherries.
- Replace goat milk with whole milk
- Most are served without unmolding. I prefer to unmold and pour three milk mixture
slowly over cake. Before pouring mixture over cake it helps to poke holes in it with
a fork to speed absorption. Mixture will seep in over time allowing for more to be added.
Final result is a more attractive cake, sometimes with a small puddle of sauce
surrounding.
- Skip meringue and glaze cake in chocolate coated with fresh strawberries.
- Cheat - buy a pound cake (white cake or sponge cake), soak in three milk mixture and top
with whipped cream.
- Top with berry puree.
- Top with candied fruits.
- Blow Torch icing to brown.
