Dulce Zacatecano

wpe4.jpg (4886 bytes)Dulce Zacatecano is a simple, but elegant dessert that you can create up to two days before a get together.  I like to use this as an ace in the hole when I have guests for dinner or need to bring a dessert to a shower or pot luck.  The only necessity is bananas and whipped cream. Below the recipe are tips on making your dish unique and saving time.

Ingredients:

  • 3 large bananas
  • 5 tbs butter
  • 1/4 cup sugar
  • 1/2 cup heavy sweet cream
  • 1/4 cup dry sherry
  • 1 tsp vanilla

Directions:

  • Sliced peeled bananas lengthwise.
  • Sauté in butter until light brown (they will smell wonderful).
  • Drain and set in shallow cake pan.
  • Spread a thin layer of sugar (not all!) evenly over bananas.
  • Whip cream together with remaining ingredients.
  • Spread cream on bananas.
  • Chill at least one hour.
  • Serve cold.

Variety:

  • Use brandy instead of sherry.
  • Use your favorite flavored liqueur in place of sherry.  Fruit flavors work well.
  • Add a second fresh fruit as garnish.  Any berry would work.
  • Use flavored syrup as a garnish.  The photo above uses a raspberry syrup intended for coffee flavoring.

Tips:

  • Dish can be created up to two days in advance.
  • Frozen fruit (not bananas) can be used if given time to thaw.
  • Ready made whipped cream can be used to save time.
