A Mexican meal often ends with extra beans. We all know that refried beans are one easy solution. Following are two more delicious recipes that can often be made with the leftovers in your fridge.

Day After Bean Soup

Ingredients:

  • 2 large beefsteak tomatoes - pureed
  • 1/2 onion - pureed with tomatoes
  • Garlic Clove - added to puree
  • 4 cups cooked beans
  • Salt to taste
  • 2 serrano peppers
  • 1 - 2 roasted ancho peppers
  • White Farmer's Cheese
  • 1 Sliced avocado

Directions:

  • Pour tomato puree into large pan over high heat.
  • Puree beans.  Use water or chicken broth to thin to desired consistency.
  • Add peppers to puree.
  • Pour beans into pot.
  • Add salt to soup.
  • Bring to boil. reduce heat and let boil 10-15 minutes.
  • Serve topped with thin avocado slices and cheese.

Bean Dip

  • 1/4 c. medium salsa
  • 2 c. refried beans
  • 1/2 c. grated cheddar cheese
  • 1/2 c. jack cheese
  • 1 TBS sour cream
  • olives

Directions:

  • Mix salsa, beans, and most of the cheese with large spoon.  
  • Top with remaining cheese, sour cream and olives.
  • Serve with tortilla chips.
