Casseroles are an American adaptation of dishes that used to be Mexican.  Americans tend to take the ingredients or idea of a recipe and find a way to cook it in a casserole dish to bring to a pot luck, comfort a neighbor or prepare a homecooked meal three days before a basketball game keeps everyone out until 7.

This dish is a relatively easy crowd pleaser that works well as a cold lunch the day after as well.

Ingredients

  • 2 lbs. lean ground beef
  • 1 can green chiles
  • 1 or 2 cans Rotel
  • 1 lg. can refried beans
  • 1 lg. jar Taco sauce
  • minced garlic to taste
  • 1 onion minced or diced
  • 1 pkg. of 12 flour tortillas
  • 1 lg. block Colby/Jack cheese shredded
  • 1 can of black olive sliced
  • diced jalapenos to taste
  • Pie plates

Directions

  • Preheat oven at 350 degrees.
  • Brown ground beef with onion and garlic, drain.
  • Add the Rotel, taco sauce, refried beans, green chiles, and black olives.
  • Mix and let simmer for 15 minutes.
  • Put enough meat mixture in the bottom of a pie plate to keep tortilla from sticking while baking.
  • Lightly brown a tortilla on both sides then place on top of meat mixture in pie plate add more meat mixture on top of tortilla to cover then add some shredded cheese to cover.
  • Continue to layer ending with meat and cheese on top. Fill pie plates till you run out of ingredients.
  • This recipe should make enough for 3 pies. I generally make 2 pie plates and a 2 qt. casserole dish.
  • This recipe can be made hotter or milder according to taste.
  • Bake at 350 degrees for 20 to 25 minutes.
  • Serve by cutting like slices of pie and garnish with salsa, sour cream, guacamole, etc.
