Burrito Pie
Casseroles are an American adaptation of dishes that used to
be Mexican. Americans tend to take the ingredients or idea of a recipe and find a
way to cook it in a casserole dish to bring to a pot luck, comfort a neighbor or prepare a
homecooked meal three days before a basketball game keeps everyone out until 7.
This dish is a relatively easy crowd pleaser that works well
as a cold lunch the day after as well.
