Using Leftover Mexican - Chicken

Last week we explored recipes for leftover beans.  This week - What do you do with chunked chicken the day after?  Often this chicken is flavored.   The most common usage is to toss the chicken in a tortilla and go.  however, there are numerous delicious meals waiting for your next "day after."

Chicken Salad

  • 2 cups chicken chunks
  • 1 cup cooked corn
  • 1 cup cooked black beans
  • 1 1/2 cups salsa
  • 1/4 cup chopped green onions
  • 1 chopped tomatoes

Mix all ingredients together and chill for at least one hour.   Serve with tortillas, chips or lettuce.


Chicken Soup

  • 8 cups chicken broth
  • 3 cups fresh corn
  • 8 oz green chiles (choose favorite heat)
  • 1 chopped onion
  • 2 tsp. dry epazote

Top with

  • avocado chunks
  • fresh cilantro
  • fried tortilla strips
  • white farmers cheese

Bring all soup ingredients to rolling boil.  Reduce heat to simmer and simmer for 10-15 minutes.

Top each serving with choice of toppings from above.
