Did you have a mouthwatering burrito south of
the border and can't identify the ingredients? If the meat had an initial crunch and
melted in your mouth, it may have been cabrito. Cabrito is the meat of a
young goat. While difficult to find in some countries, cabrito is a popular meat with most
who have tried it.
Buying Cabrito
My sources advocate finding a local
farmer who raises goats. If you can talk him into butchering a baby goat for you, invest
in a deep freezer and thaw out meat as you need it. Some local co-ops may be able to find
you a willing farmer. Once you have your source, cultivate him or her well.
You may just become addicted and you'll want to make sure you can feed your habit in the
future!
You will generally want to purchase
your goat meat between May and October since the goat should be between one and two months
old when butchered. Once goats have begun to graze, their meat changes flavor.
