I looked at the link for the White Cheese Dip recipe you
posted in your column but that's not the dip served by many Mexican restaurants throughout
the southeastern United States. I've tried to find the white cheese dip in Texas, New
Mexico, Virginia, and Ohio through the years and have had no success. I didn't know any
Texmex establishments were aware of the dip, although the use of green chili instead of
jalapenos is different from what I'm used to back east.
I live in Albuquerque now and have never found the dip outside of
Georgia, Alabama, Tennessee. I acquired a recipe through email last year after asking
about this dip in a news group and have posted it on a Web site [http://www.xenite.org/conqueso.htm].
The chief differences between the recipes are that jalapenos are used in the
"Southeastern" recipe, and only Asadero cheese is recommended for that one.
Poblanos are recommended as a substitute for jalapenos, but if I've ever tried that
variant I didn't know what I had.
Land'O'Lakes sells a white cheese dip which is very similar to these two recipes, but I
was only able to purchase it in the Atlanta area at a KROGER store. I tried to special
order it through two grocers in Ohio last year but neither was able to find a distributor
for it. These recipes are like gold. A lot of people have written to me to let me know
they appreciate my posting the one I was given.
I suspect these two recipes are very similar in taste, except for the chili versus
jalapeņo. Are there any restaurants in the Dallas area which serve the white dip that I
might look for when I pass that way again?
