I am from the north of Mexico and we fix the chile
relleno this way. hope this is the way that are you looking for. First you buy the
kind of chile to fill (Poblano), then you burn the chile on the flame of the stove
(so you can take off the chile`s skin ) after all this you open a slit to take all
the seeds out and filled with previously cooked ground beef and/or cheese To close the
chile`s slit do it with a toothpick then put flour in a plate turn the chile there so the
chile can be ready to be turn in to the eggs mixture then finally goes to the hot oil
until turns to a yellowish color. To prepare the mixture of the eggs just batter the eggs
white for 10 min with a blender then add the yolk while you still battering add salt as
you like and turn the chile into the mixture a goes directly to the fraying pan to cook
