Cabbage Stir Fry with Smoked Sausage

NOTE: This recipe requires a wok because of the high tempurature
requirements.
2 Tbsp Extra Virgin Olive Oil
Soy Sauce
1 small/medium head of cabbage shredded by slicing with a knife
2 medium onions (or one large) sliced (slices halved so onions come apart)
3 stalks celery chopped
1 package of smoked sausage (i.e. Ekrich Lite) or keilbasa sliced
Fresh ground pepper
Put olive oil in wok and use circular motion to cover bottom of wok. Cover wok
and turn wok on high to heat up oil (approx 400 degrees). Once oil is hot place
sausage into wok and brown lightly uncovered about 1-2 minutes. (NOTE: For
greasier sausage you can use less olive oil). Add vegetables and stir well.
Add fresh ground pepper to your own taste. Stir very frequently. Dash on soy
sauce liberally, stir in. Cook a bit, then add a second dash of soy sauce.
Cook til desired tenderness, stirring almost constantly. I prefer my cabbage to
be tender yet crisp.
Serves 4-8.
