Apple Butter
My grandmother used to make this: Makes about 10 6-ounce jars
4 lbs tart apples (Granny Smiths are great)
1 1/2 C. water
1/2 C. cider vinegar
Cut apples into 1" cubes, without peeling. Coring them is optional. Cover
with liquid and cook until soft. Put through a seive or Mouli (spelling?) grinder.
Measure liquid and add:
1/2 C. granulated or superfine sugar per each cup of apple mixture dash of salt
2 tsp of cinnamon
1/2 tsp ground clove
1/2 tsp nutmeg
1/2 tsp allspice
1 lemon (grated rind and juice)
Cover and cook over low heat until sugar dissolves. Uncover and cook quickly,
stirring with a wooden spoon, until mixture is smooth and thick, when spooned onto cool
plate.
