Cranberry Relish

Here is my favorite Cranberry Relish, given to me by a former
sister-in-law from West Virginia.
 
1-lb bag of cranberries (the bag may be just 12 oz, that will work too) 2 Cups of sugar
1 small flat can of crushed pineapple
1 small cored  medium Delicious apple with the peel
1 medium seeded juicy orange, including the rind
1 cup chopped walnuts
 
The original recipe said to grind the cranberries, the apple including skin, and the orange including rind in a meat grinder.  That made it very juicy.  Today I use the food processor.  It is not quite as juicy, but much faster!  To this processed fruit add the sugar and the canned pineapple, including the juice.  Then add the chopped nuts.  It is best if left overnight in the refrigerator.
 
Some people omit the pineapple and others omit the nuts. Some people like less of the orange peel, start out with just part of the peel and adjust if you want more. 
 
This recipe makes a large amount, but you can freeze it. It also is good drained and added to jello. I have never tried to halve it, but I don't see why it wouldn't work.
