Homemade Dressing
My family enjoys potato salad for Easter....here's how to make my Grandmother's dressing, which is low-fat.....
Homemade Dressing for Potato Salad (and other uses)
2 Tbs flour
1/2 cup vinegar
1/4 cup sugar
1/2 cup water
1 tsp dry mustard
1 egg
beaten (try Egg Beaters, etc) 1 tsp salt
1/2 tsp pepper (optional)
Mix flour, sugar, dry mustard and salt together in a saucepan. Then gradually add
water, vinegar and egg, stirring with a wire whisk. Heat on medium heat, stirring
constantly until sauce thickens to the consistency of mayonnaise.
Use as a dressing for potato salad or refrigerate until needed. This keeps for up to
a week. This is good on steamed broccoli, too.
NOTE: I make potato salad from potatoes, parsley, pickle relish, and finely minced
onion (all fat-free) and use Grandmother's dressing and a little Duke's or Hellman's
low-fat mayonnaise to make the dressing.
