Homemade Pasta

Gunther, my Nona's recipe is very easy.  It's as follows:  1 1/2 c. flour and 2 eggs.  This is for 2 people.  If it's more people, just keep increasing.   In large bowl, combine flour and eggs.  Add a small amount of salt (I don't) and if needed, add water a few drops at a time.  Knead into a ball and put in a bowl or put under an inverted bowl on a floured board.  Start early in the day so you can knead several times during the day.  Flatten dough ball a little and cut in wide strips.  Roll each enough to fint in a manual pasta machine.  Roll at least 3 times to get them very thin.  Cut and they're ready to cook!  If storing them, make sure they are very dry so they won't get buggy or mold.  If you don't have a pasta machine, roll the ball out into a huge (and I mean huge) circle, roll it up and cut with knife.  That's how she did it for 95 years.  Best Pasta I ever had.   Thank God for hand-me-down recipes!
