Roasted Garlic

It is really easy....

I take some large garlic heads and slice off the tops just so that the tips of the garlic cloves are exposed.  Drizzle some olive oil on to the exposed cloves.  Place the cloves onto something suitable for baking ( i.e. cookie sheet, roaster pan....whatever ).   Bake at 350 for about 1 1/2 hours or until the tops are browned ( you will have to use your judgement here ).

When cooled, you can squeeze the cloves out of the bulb and should be very mild and the consistency of peanut butter.  I make no claims as to how long you can store it, but if you are like me , it won't
last long anyhow !!

For a little experiment, you can add some herbs to the tops when you add the olive oil.

Some places actually sell Terricotta baking containers juust for baking garlic ( go figure :-)  ).

I hope this helps....and good luck...Jon C.
