Sausage Country Gravy
To make sausage gravy [country gravy) for biscuits:
In a sauce pan, break up the sausage and fry it with minced onion. I like to add some
leftover bacon grease, because usually you will not get enough grease from the sausage.
Meanwhile, in a double boiler, heat up some milk.
When the sausage and onions are done, stir in enough flour
to absorb the grease.
Pour in the hot milk - a little at a time, please - while stirring with a wire whisk. Each
time the mixture thickens up, add some
more of the milk, until you have the gravy just the consistency you want.
Finish with salt, pepper, nutmeg, hot sauce, and thyme.
Serve over biscuits and take a bow.
