Egg in a Glass
I heard an interesting program on the Canadian Public Radio System this morning
concerning comfort foods. These are foods that your mother would serve you when you
were a child and you needed to feel safe when you were either sick, tired, or scared.
My mind instantly flashed back to the dropped eggs on toast my mother would serve
me when I was sick. The eggs were so runny! They were served on toasted wonder
bread and then bombarded with salt and pepper. What recipes do the other readers in this
newsgroup have for memories?
EGG IN A GLASS
One or two soft boiled eggs, very runny
One or two slices white bread
Salt and pepper
Tear the white bread into small chunks, including the crust. Crack open the egg(s) and use
a dinner knife to scrape contents into a 12 oz. glass. Add salt and pepper to taste. Stir
well with a long handle iced tea spoon and serve the glass at once. Great for eating in
bed and not making a mess! and delicious as well.
