Polish Potato Dumplings
8 slices bacon, chopped
1/4 cup onion, chopped
1 egg
1 tsp. salt
1 1/2 cup flour
4 cup raw potatoes, grated fine and drained
salt to taste
melted butter to top dumplings
Fry bacon until crisp; add onion. Saute. Remove from
heat; set aside. Add egg, salt and flour to make stiff dough.
Add more flour if necessary. Form mixture in balls (golf ball
size). Drop in boiling salt water with wooden spoon. Dump-
lings are done when they float to surface, 5 to 6 minutes.
Place in large bowl. Pour bacon, bacon drippings and onion
over dumplings. Add salt to taste.
