Aunt Christine's Pecan Pie
1 cup pecan halves
3 beaten eggs
1/4 tsp. salt
3/4 cup sugar
1 cup light Karo corn syrup
1/2 cup melted butter or margarine if you prefer
1/2 tsp. vanilla
i unbaked pie shell
Beat eggs and salt together with a whisk. Gradually add sugar to the egg mixture
and beat with a whisk until well-blended. Then add syrup, melted butter and
vanilla Mix all of the above together Preheat oven to 400 degrees Sprinkle pecan
halves over the bottom of the shell. Pour mixture over pecans. (This allows the
pecans to assume a shiny glaze) Bake at 400 degrees for 10 minutes. Reduce heat
to 325 degrees. Continue to bake 30 - 40 minutes longer. LET IT COOL. Then,
enjoy.
Follow directions below for a wonderful and easy crust:
2 1/4 cups flour
1 tsp. salt
1 cup shortening
2/3 cup ICE water DO NOT put all the water in at once.
Put a little bit of flour in the bowl to keep pastry from sticking to fingers
and getting too crumbly. Mix flour and salt together. Add shortening and mix
with hands. Start adding a little bit of water at a time. Continue mixing with
hands until smoothly blended. Makes 2-3 pie crusts---You can freeze what you
don't need.
