Fruit and Sour Cream Pie
8 inch unbaked pie crust
1 cup sour Cream
1/4 cup fresh orange juice
1/2 cup brown sugar
1/4 cup white sugar
1/2 tsp salt
2 egg yolks
5 Tbsp flour
2 1/2 cups peaches,, apricots and/or plums, sliced
Blend the sour cream, orange juice, sugars, and salt. Whisk in lightly beaten
egg yolks. Sprinkle 2 Tbsp flour over the pie shell. Toss fruit with the
remaining flour and turn into pie shell. Pour the sour cream mixture over the
fruit. making sure the custard gets into the spaces between the slices. . Bake
at 425 F for 15 minutes. Reduce heat to 350 and bake for 30 minutes. Let cool
before serving.
