Potato Salad

I put together this salad about 35 years ago.  It was so well liked, that I put
on paper what I had done.  This salad continues, to this day, to be my family's
(six children) favorite potato salad.
I am copying my recipe, just as it was originally written.  It is the amount for
a large family, so you may want to decrease the ingredients, and even vary to
suit your taste.

Potato Salad

3 qt pan full of potatoes  (cubed)
4-5 hard boiled eggs
1/2-3/4 cup sweet pickle relish
1 jar pimento
1/4-1/3 cup chopped onion
1/3-1/2 cup chopped fresh parsley
Salt to taste  (1-2 t)
Miracle Whip

The potatoes may be cooked ahead, and cooled before putting the salad together,
or, put together while the potatoes are still hot.
Chop the eggs, add and combine the rest of the ingredients down to the Miracle
Whip.  (This particular dressing gives much of the flavor to this salad)    I do
not use a whole lot of dressing, maybe a cup or so to start, and thin it with
some of the potato water from the cooked potatoes.  This cuts down on the amount
of dressing used, and does not alter taste.  The amount of dressing is variable
....to your taste!   (We do not like it "dry".)
Top with an arrangement of green pepper strips and sprinkle with paprika.
