Black-eyed pea salad
Hi and Happy New Year
For an easy Black-eyed pea salad try this:
3/4 cup thinly sliced celery
1 red bell pepper cut in 1/4 inch slices
1/3 cup chopped red onion
1/3 cup chopped fresh parsley
4-6 cups fresh greens -spinach, 2-3 kinds of lettuce, etc.
1 10 ounce package frozen Black-eyed peas ( canned would probably work)
Wash all the greens in cool water. Pat off excess moisture with a
cloth or paper towel ( I use my salad spinner) Place greens in a container and
refrigerate until ready to use. Allow one hour for the greens to thoroughly chill.
Honey-Mustard Vinaigrette Dressing
2 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
3/4 teaspoon salt
1/4 teaspoon tabasco sauce
1 clove garlic, minced
6 tablespoon vegetable oil
In a large salad bowl mix all the dressing ingredients and whisk until
thoroughly bleneded. Add the Black-eyed peas, celery, pepper and onion. Just
before serving, add the chilled greens and toss well. If you plan for a party, you
may want to double or even triple the recipe. I think this recipe should serve 4-6
moderately hungry folks as your salad
