Onion Topped Walleye

1 1/4 pounds walleye fillets
salt to taste
fresh ground black pepper -- to taste
2 tablespoons Dijon mustard
2 teaspoons honey
1
large onion -- sliced
paprika
Preheat oven to 425 degrees. Rinse and pat the fillets dry. Season with
salt and pepper and place in a lightly oiled baking dish, tucking the thin
ends under. In a small bowl combine the Dijon mustard and honey. Smear
this mixture over the fillets then arrange the onions, overlapping, on top
of the fillets. Sprinkle with paprika. Place in the oven and bake 15
minutes, or until fish is opaque through its thickest part.
