 2      tablespoons   butter
 1                     shallot -- peeled and chopped
   1/2  cup            heavy cream
   1/2  pound         scallops
Paprika
   1/4  cup           dry vermouth
 4                     fresh parsley sprigs-chopped -- no stems

Melt butter in a saute pan or skillet; add shallot and stir until soft,
about 1 minute. Pour in cream, raise heat, and boil for 2 minutes. Add
scallops and cook slowly 2-3 minutes. Season with paprika to taste; add
vermouth and cook 1 minute longer. Sprinkle with parsley and serve.
