Fried Zucchini
My husband especially likes this dish. He says it takes like fried oysters.
Fried Zucchini
Small zucchinis
Eggs
Flour
Grated Parmesan cheese
Olive oil
Butter
Wash, cut off ends, but don't peel zucchini. Slice into thin slices, dip in beaten
eggs and then in mixture of flour and cheese. Fry in olive oil and butter.
Drain on paper towels.
We like this with pork chops baked in applesauce, rice, and corn and green beans from the
garden.
