Onion Rings

This is a recipe I got out of the newspaper at least 30 years ago..I haven't found a better one..
 
Mix  equal  amount of all purpose flour and beer and let sit at room temperature for at least 3 hours.
 
Cut large onions into 1/4 inch slices and seperate into rings.
 
Have shortening  at least 2 inches up the sides of heavy pan.  Heat to 375 degrees.
 
With metal tongs, lift a few onion rings and dip in batter then drop into hot oil.   Cook until a delicate brown.
 
Transfer to brown paper lined jellyroll pan and put into a 200 degree oven to keep hot until all are cooked.
 
The recipe says you can freeze these and reheat in 400 degree oven...I never have enough to do that!

PS  The beer can be cold, warm, flat or any combination of conditions.
