Onion Rings
This is a recipe I got out of the newspaper at least 30 years ago..I haven't found a
better one..
Mix equal amount of all purpose flour and beer and let sit at room temperature
for at least 3 hours.
Cut large onions into 1/4 inch slices and seperate into rings.
Have shortening at least 2 inches up the sides of heavy pan. Heat to 375
degrees.
With metal tongs, lift a few onion rings and dip in batter then drop into hot oil.
Cook until a delicate brown.
Transfer to brown paper lined jellyroll pan and put into a 200 degree oven to keep hot
until all are cooked.
The recipe says you can freeze these and reheat in 400 degree oven...I never have enough
to do that!
