Pickled Beets
Commercial pickled beets have a problem to my individual taste. They are
usually much too sweet for my liking but can also be too sour.
Fortunately, making them to one's taste is very simple. Here's my recipe
even if it is really too simple to be called one; the amount of vinegar
is up to you really!
Pickled Beets
One can or jar of whole beets (small sized beets are best)
1/3 cup white vinegar
Remove 1/3 cup of liquid and replace it with the same amount of vinegar.
Shake and store overnight in the refrigerator. They will get more sour
as time goes by so it is best to eat them quickly; no problem for me!
