Pickled Fresh Beets
When you have eaten fresh beets, you will never go back to bottled beets;
they are two different types of vegetables. It only takes one hour to cook
fresh beets in their skins
Pickled Fresh Beets
fresh beets
vinegar
salt
pepper
a little sugar
caraway seeds
Place the beets in a pan of cold water and bring to a boil. Simmer about an
hour or until the beets are tender. Let the beets cool a bit and slip off
their skins. Slice the beets and pour some vinegar over them Season to taste
with salt, pepper and a little sugar. Sprinkle with a few caraway seeds and put
them in the refrigerator. Boy are they good.
