Potato Pancakes

Potato Pancakes

1 lb. Long or white potatoes, peeled and shredded
1 egg, lightly beaten
1 medium onion, shredded
1 Tbsp All-purpose flour
1 medium carrot, shredded
1/2 tsp. Salt
1/2 tsp. Fresh lemon juice
1/2 cup of oil for frying

Combine potatoes, carrot, onion, flour, egg, salt and pepper in a bowl.
Stir throughout
Heat oil in a nonstick skillet. Spoon 5 pancakes, one heaping tablespoon
each, into oil. Cook 1-1/2 minutes per side. Drain on paper towels.
