Stuffed Peppers
Try :
500g Mince meat (beef,veal,lamb,etc - chicken is nice but i havn't made it myself)
salt, pepper, parsley, oregano,garlic (adjust types and quantities to taste and the meat
you're using)
1 can tomatoes or 1 bottle tomato (pasta) sauce
1 cup raw rice (or pearl barley)
mix until well combined.
cut the tops (stem end) off 4 large rounded capsicums and retain. I prefer to use red
peppers. green give a stronger flavour. (a friend trims the bases so that they will sit
flat (see later) but this is unnnecessary if you get a tight fit in the pan.
Wash well inside and out, removing seeds.
Stuff the pepper. Fill well, but not too firmly. The rice needs to expand.
Place the peppers in the pan, open side up.
Pour over some more tomato sauce.
Cover each pepper with it's lid (the bit you cut off earler)
Bake 180*C for 45min-1hr
