Triple Corn Fritters
Here's a good one. Supposedly this is from 1960, by the Green Giant test
kitchens:
Triple Corn Fritters
1 1/3 C. all-purpose flour
1/2 C. yellow cornmeal
1 Tbs. baking powder
2 tsps. sugar
1 tsp. salt
2 eggs, beaten
1/3 C. milk
2 Tbs. oil
1 8 1/2 oz. can Green Giant Brand Golden Cream Style Corn
1 12oz can Green Giant Niblets Brand Golden Whole Kernel Corn, drained * Oil, for
deep-frying
Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour,
cornmeal, baking powder, sugar and salt. In large bowl, combine eggs, milk, oil and
cream style corn. Blend in dry ingredients, stirring just until moistened.
Stir in whole kernel corn. In deep fat fryer or heavy saucepan drop better by
tablespoonfuls and fry in 2-3 inches hot fat (365F) for 2-3 minutes on each side or until
golden brown. Drain on paper towel. Serve warm. Makes 28 fritters.
