Pressure Cooker Beans
I use the pressure cooker every time I make beans anymore because its so much faster
than a crock pot. After heating the beans in water to a boil, let set for one hour
to swell up. I like to use ham hocks for flavor so I pressure cook two ham hocks
with water for about 15 mins. Remove the bones, fat and oil. Add the beans and
onion and what ever else you like in beans and pressurecook for 45-50 mins. Cool cooker
under cold water and remove about a half of a blender full of the beans and water and
puree it, then add it back to the rest of the pot. Make sure you make some corn bread to
go with it. This is how us country boys in Missouri like it.
