Sweet and Sour Red Cabbage
SWEET & SOUR RED CABBAGE
1 1/2 Tbsp. unsalted butter
1/2 cup water
1 1/2 Tbsp. vinegar
1 1/2 cups chopped onion
1 (2 lb.) head red cabbage, cored, shredded
(1/4 in. thick; 8 cups)
1 Granny Smith apple, peeled, quartered,
cored, thinly sliced
1 cup sugar
1 1/2 tsp. salt
1/2 tsp. each caraway seeds and pepper
In Dutch oven or large pot, melt butter, add onion; saute 5 minutes. Add cabbage and
apple. Saute 5 minutes until cabbage starts to wilt. In bowl combine 1/2 cup water, 1 1/2
Tbsp. vinegar and remaining ingredients. Add to cabbage mixture; cover. Simmer, stirring,
1 1/2 hours, until cabbage is very tender. Add remaining vinegar. Makes 5 cups 60 calories
