Dad's Beast Stew

Do they sell "Lipton Onion Soup Mix" there in Australia?  I came up with a VERY GOOD beef stew recipe recently, but I did cheat and use this onion soup mix.

I suppose that you could substitute any onion soup...but reduce it from 4 cups to 3 cups to intensify the flavor.

Herez the recipe for anyone who cares.  This is my own, new recipe. (I DID swipe some ingredient ideas from a few other recipes though) ;)

Suggest you try it as is to start with....it's hard to beat!

=====================================================================

Dad's Beast Stew

- 1¼ to 1½ pounds of roast beef (cut into bite sized cubes)
- 1 large vidalia onion (or any kind), chopped
- 1 medium squash, cubed
- 1 medium green pepper, diced
- 4 carrots, peeled and sliced
- 4 stalks celery, sliced
- 4 medium-large potatoes, cubed
- 1 package Lipton onion soup mix
- 3 bay leaves
- 1 Tbs. Worcestershire Sauce
- 1½ Tbs. oil (canola or vegetable oil)
- 3 cups hot water
- 1/2 cup water (for deglazing beef pan)
- mix of 2 Tbs. flour & 1/2 cup cold water

Semi-freeze beef(so it's easier to cut) and cut into bite-sized pieces.

In large frying pan, heat 1½ Tbs. oil to smoking point... add 1/3 of the beef, the worcestershire sauce and SEAR until dark brown. Remove with slotted spoon.

Repeat with second 1/3 beef...this time adding the green pepper too. (don't add any more oil or worchestershire sauce)

Finally, sear the final 1/3 beef.  After cooking this, add 1/2 cup water to the frying pan to deglaze it...

In a crock-pot or a large saucepan, put in the cooked beef (with green pepper), the 1/2 cup of deglazed beef water, all the vegetables, the pack of Lipton onion soup mix, the 3 bay leaves, and the 3 cups of hot water.

Bring all this to a boil, then simmer for approx. 3 hours.

After that... bring to a rolling boil, add the mix of:
(2 Tbs flour - 1/2 cup cold water) to the stew and stir for
about 3 minutes.

That's it...  eat... feast!!!!  (As with all stews or soups, it's even better the next day).

:-D
