Fruit Soup
I haven't read all the posts on this thread yet, so you may already have all the
recipes for fruit soup that you need, but I have a recipe with cherries
(canned, not dried though), so here's one more for the pile.
Ingredients:
1-pound package unpitted prunes
1/2 pound (1 1/2 cups) raisins
2 cinnamon sticks
6 cups water
4 ounces (1 cup) dried apricots
1-8 1/2 ounce can unsweetened cherries and juice
3 tablespoons quick cooking tapioca
1/4 cup sugar
Combine prunes, raisins, cinnamon sticks, and water in a large, heavy kettle. Bring to
boil, then reduce heat and simmer about 30 minutes or until prunes and raisins are soft.
Add apricots and cook for 10 minutes or until they are plump and soft. Pour off liquid
from cooked fruit into another kettle. Add juice from cherries to liquid. Then add tapioca
and sugar. Cook over medium heat, stirring often, until tapioca is clear. This takes about
30 minutes. Add thickened juice and cherries to fruit. Stir. You can add slices of oranges
and lemons to this mixture. Serve while warm, or eat cold.
