Thai Fish Soup
this is really easy and very tasty! make sure you use heaps of
corriander (a couple of handfuls). it should taste sweet, sour,
chillish, and fishy etc.. all at the same time. Even if you don't like fish you
should like this soup!
in a small pot simmer: 1tsp chicken stockpowder
1cup water
a few pieces of laos root and lemon grass
add water to keep up to one cup
If using fish with bones in it, bake the fish and them remove the bones easily (20mins or
so)
In a big pot bring to boil: 1 tin of coconut milk
2 cups of water
2tsps chicken stock powder
do not put a lid on or it may curdle
Chop up veges: celery
baby corn
carrots
potatoes (waxy as opposed to floury..floury may disintergrate)
Add to coconut milk and water
Chop up heaps of fresh corriander add
Add fish sauce, enough to taste
Add chillis or chilli sauce to taste
strain laos root and lemmon grass and add remaining water\stock
Add fish and stir to break up fish into chunks
simmer until veges are cooked.
Serves about 5-6 people easily :)
