Winter Potato Soup
Here's one that I like to make - I call it winter potato soup because it's nice -n-
warm.
Cook some New potatoes (or Yukon Gold) in some chicken stock until tender.
Roast one poblano chile in the oven until blackened. Put in a brown paper bag for about 10
minutes so when you take it out it will be easy to peel. Make sure you get all the
blackened skin off, and also take all the seeds out. Cut into julienne strips. Chop two
slices of bacon into small pieces and saute until done, then add poblano and two chopped
shallots or half a chopped onion. Saute for about 2-3 minutes. Put the potatoes and stock,
a little at a time, into a blender, and blend just until smooth. Add poblano/onion mixture
and blend. Pour mixture back into pot and bring to a boil, then add some cream.
