Chestut Soup

Further to the recent request for broccoli soup I thought I'd pass on one of my favourite soup recipes: Chestnut.  It's quick and easy and tastes great.  Here goes:
 
 
1lb tinned chestnuts
1 large onion
2 generously sized carrots
a little oil
2 pints stock
seasoning
 
Fry chopped onion and carrots in oil until soft (about 10-15 mins). Add the stock and cook for about 20 mins.  Add chestnuts and seasoning. Cook for a further 10 mins or so. Allow to cool a little.  Liquidise and serve warmed through. 
 
The great thing about soup is you can't really overcook it and you can make it with pretty much anything provided it has something oniony in it!
