Milk

Butter Or Margarine
2 Tbs
Flour
1 Slice
Onion
1 Stalk
Celery -- and/or some parsley
2 Lg. Stalks Broccoli -- * see note
Salt And Pepper

Blend all ingredients in blender after cutting up broccoli into pieces. Cook
slowly stirring until creamy. I use my diffuser which I wish everyone had one.
They only cost $4.00 and then I don't burn my soup. I use skim milk,
and the protein scorches easily when there is no fat. But if you don't have
a diffuser just cook gently and stir. The reason that this soup was so delicious was
that the brocolli was still a little crunchy. It was really delicious. You can
also use frozen vegetables but add them after your other ingredients are blended so you
don't crush them all up. Use leftover
vegetables. It is really a wonderful recipe. After the soup is heated
throughout, (and you might need to add a touch of water or vegetable juice if it gets too
thick), top with grated cheese. I used freshly grated greek
cheese and only needed a little bit. Parmesan would also be good.
